It's an R. Kelly Pillowcase!!


In bright light you can trace anything you want on a pillowcase,
the obvious choice would be R. Kelly. 
I embroidered the outline using basic stitches.

Taco Party!!!


 Taco's are my favorite food.  I think they are wonderful little blankets filled with happiness and topped with Guac!  I like them every way; vegetarian, traditional or combined with not so traditional flavors. Here I have mostly Mexican flavors with a touch of Asian.

Spicy Asian Taco Slaw was the star of this show!
 It goes well with pork, chicken and fish. 

Homemade Taco Pickles and so much Sriracha
makes every taco the best you have ever had.  
Fried Tilapia w/ oven roasted corn on the cob topped with
 oaxaca cheese and paprika, be still my heart.
(I used the oven because I live in a small apt in BK if you
can I would suggest grilling the corn.) 

I like to bake my tortilla chips w/ a little olive oil spray, spices and salt.
So easy to make in advance and toast up right before company comes.
Top with a squeeze of lime and really show them who is boss!
Signature Cocktails!




Cumin and Honey Roasted Pork Loin
3-4 lb pork loin
dry rub- 2 T cumin, 1 T curry powder, 2 T brown sugar, 1 t Red chili flakes
Salt and pepper pork, then rub with dry rub.  Let stand for 1-2 hours or even better overnight.
Sear in a hot pan with olive oil on all sides 1-2 min per side. 
Layer bottom of crock pot with one large yellow onion cut into thick slices, 3-4 whole smashed cloves of garlic, 1/3 cup soy sauce and 2/3 cup water.  Place pork loin on top, set crock pot to low and cook for 5-6 hours. Pork should be able to fork apart, top with cilantro, drizzle of honey and sprinkle withe chili flakes.

Buttermilk Breaded Fish with Chipotle Mayo
You can use any white fish fillet, I used Tilapia.
bread by first coating with flour mix ( 1/3 cup flour, salt and pepper to taste) then buttermilk about 2/3 cup, then place in bread crumbs ( bread crumb mix with, 1/4 tsp ginger, salt and pepper to taste. ) Add 1 tsp olive oil to bread crumbs if baking fish bake at 425 for about 15 min or until fish is done. OR you can pan fry in olive oil top fish with chipotle mayo.

Lemon Salsa Verde Roasted Chicken
Roast a small chicken, rub with butter, salt, pepper, garlic and rosemary, place 1/2 lemon and garlic in the inside of chicken. Roasting time depends on size of chicken. OR you could just buy an already roasted chicken and not tell any one...Top with salsa verde chili flakes. 


Spicy Asian Slaw
1 c shredded white cabbage
1 c shredded red cabbage
1/2 c shredded carrots
1  julienne green apple
2-3 thinly sliced radishes
1-3 thinly sliced jalapeƱos (as many as you want)
1/2 cup chopped cilantro

Dressing
3 T apple cider vinegar
2 T brown sugar
2 T soy sauce
2 T toasted sesame seeds
2 cloves minced garlic
1/2 T minced ginger
1 1/2 limes juiced
2 T creamy peanut butter
(optional) sriracha and red chili flakes to taste…I like it spicy.

Mix Dressing separately and poor over veggies, mix all together and let stand for at least 1-2 hours before serving.
I love to have this with fried or steamed fish tacos, on a soft grilled corn tortilla, with sriracha sour cream and a slice of fresh avocado.
Also great to pair with pulled pork sandwiches or as hot dog topping.

Sides
Pickled Red Onions (thinly slices red onions topped with apple cider vinegar) , Quick Cucumber Pickles (small persian cucumbers fill jar with cucumbers, top 2/3 of the way with rice vinegar, finish with white vinegar, pinch of salt and 1 t sugar.) Traditional Guacamole (always fresh never store bought) Corn Salsa, sour cream, pickled jalapeƱos. 

Refried Black Beans-use your favorite refried canned beans and use 1/2 cup pork juice from above pork loin to 2 cans of beans to add flavor (I used Vegetarian Refried Black Beans). Top with chopped red onions, cilantro and queso fresco.

Brown Jasmine Rice- prepare as directed, when rice is cooked add 1 T rice vinegar and 1 T chopped cilantro, salt to taste.

Taco Party Signature Cocktails!
Thai-garita
8 oz Tequila
4 oz triple sec
5 oz lime juice
2 oz simple syrup
1 can Taste of Thailand coconut milk (shake can or blend with hand blender to make smooth, no lumps) 
dash of red pepper flakes

Rim glass with mix of 3T sugar, 1 t sea salt, 1/4 t red pepper flakes
pour mix over ice and garnish with lime.
Serves 4-6

Pom-TEA-ni
2 oz simple syrup
2 oz fresh lemon juice
2 cups unsweetened ice tea
1 cup 100% pomegranate juice
8 oz vodka

Fill glasses with ice, pour in mix 3/4 of the way and top with Doc's Pear Hard Cider.
Serves 4-6
